Ah, the Atlantic divide. It is true we don't really have cowboy as a job over here, if cowboy really wont work I think the idea of using a German word is the best option for you! As a side note, it's "What do you call your boyfriend? I am a 25 year old woman, and I call my boyfriend 'baby' or 'hun' I would not recommend 'dear', it sounds too old fashioned.
And absolutely not on the 'cowboy' or 'stud' idea, to me they have sexual connotations that shouldn't really be used in public.. Hope that helped.

If he calls you "sweetheart" go ahead and call him that too. My girlfriends all called me the diminutive of my first name. Names like Robert have various forms: Robert formal , Rob or Bob buddy name , Robby, Bobby child or a name his girlfriend would call him.
There are names that defy that convention: Howard, Howie; Paul, Paulie, And there are names that don't allow any changes: Eli, Bart So what is your boyfriend's first name. I add my vote to the German lobby. Use German terms of endearment. If he loves you he will enjoy hearing your own language. It will also make him feel special because his American friends will have to make do with boring American words like "Honey" from their girlfriends.
